Wegański sernik na murzynku (bez cukru) z nutą pomarańczy/ Unsweetened vegan cheesecake on cocoa cake


Przygotowując przepisy na ciasta moim nadrzędnym celem jest, aby zaserwować rodzinie deser pyszny i zdrowy. Problem pojawia się, kiedy w grę wchodzą kubki smakowe, a u mnie w domu panuje wysoka rozbieżność w tej kwestii. Najlepszym rozwiązaniem jest kompromis i właśnie takim kompromisem jest to ciasto.

Moja Mama to fanka serników, mój Brat z kolei to czekoladoholik, Tata najbardziej lubi szarlotkę, ale i tak zje wszystko, co przygotuje bez żadnego "ale".

Jako że szarlotkę niedawno piekłam (tu przepis) to postanowiłam tym razem przygotować coś dla Mamy i Brata. Tak oto powstał majstersztyk cukierniczy. Sernik z nerkowców na murzynku. Bez grama białego cukru z intensywnym pomarańczowym aromatem- rodzina stwierdziła, że to najlepsze ciasto wegańskie jakie upiekłam!

(Forma 24 x24 cm)
  • 600 ml mąki orkiszowej 1100
  • 150 ml migdałów mielonych
  • 8 łyżek kakao
  • 75 ml ksylitol
  • 2 łyżeczki sody oczyszczonej
  • szczypta soli
  • 2 łyżeczki octu jabłkowego
  • 5 łyżek oleju kokosowego nierafinowanego (płynnego)
  • 2 szklanki świeżo wyciśniętego soku z pomarańczy
  • 1 łyżeczka otartej skórki pomarańczy

Mąkę, migdały,  kakao, sodę, sól wymieszać i przesiać do miski. Dodać ksylitol i skórkę pomarańczy. Sok połączyć z olejem i octem. Składniki płynne wlać do suchych i dokładnie, ale delikatnie wymieszać tylko do połączenia.

  • 130 g orzechów nerkowca namoczonych przez min. 12 godzin
  • 50 ml świeżo wyciśniętego soku z pomarańczy
  • 1 łyżeczka otartej skórki pomarańczy
  • 2 łyżki oleju kokosowego nierafinowanego
  • 160 g jogurtu kokosowego
  • 3 łyżki ksylitol
  • szczypta soli
  • 2 łyżki budyniu waniliowego

Wszystkie składniki zblendować na gładką masę- bardzo dokładnie, aby nie pozostały kawałki orzechów.

Do formy wyłożonej papierem do pieczenia przelać ciasto kakaowe. Następnie, równomiernie wylać część "sernikową"- tu korzystając z wyobraźni można ułożyć wzorek. Piec w temperaturze 170 stopni Celsjusza przez 55 minut. Zostawić do wystudzenia w piekarniku i gotowe!

When I am preparing recipes for cakes, my main goal is to serve delicious and healthy dessert to my family. The problem arises when taste buds are at stake, and at my house there is a high discrepancy in this matter. The best solution is a compromise and a compromise is this cake.

My mom is a fan of cheesecakes, my brother is a chocolateholic, Dad likes apple pie the most, but he will eat anything that I prepare myself without any "but".

As I recently baked apple pie (here the recipe), I decided to prepare something for my mother and brother this time. This is how a confectionery masterpiece was created. Cashew cheesecake on a cocoa cake. Without a gram of white sugar with an intense orange aroma - the family said it was the best vegan cake I've ever baked!

(Baking mold 24x24 cm)
  • 600 ml of spelled flour type 1100
  • 150 ml ground almonds
  • 8 tablespoons of cocoa
  • 75 ml xylitol
  • 2 teaspoons of baking soda
  • pinch of salt
  • 2 teaspoons of apple cider vinegar
  • 5 tablespoons of unrefined (liquid) coconut oil
  • 2 cups of freshly squeezed orange juice
  • 1 teaspoon of grated orange peel

Flour, almonds, cocoa, soda, salt mix and sift into a bowl. Add xylitol and orange peel. Combine the juice with oil and vinegar. Pour the liquid ingredients to dry ones and mix them thoroughly but only until they will be connected.

  • 130 g of cashew nuts soaked by min. 12 hours
  • 50 ml of freshly squeezed orange juice
  • 1 teaspoon of grated orange peel
  • 2 tablespoons of unrefined coconut oil
  • 160 g of coconut yogurt
  • 3 tablespoons of xylitol
  • pinch of salt
  • 2 tablespoons vanilla pudding

All ingredients blend to a smooth mass - very carefully so that no pieces of nuts remain.

Put the cocoa cake into the mold lined with baking paper. Then, evenly pour out the "cheesecake" part - using the imagination you can arrange the pattern. Bake at 170 degrees Celsius for 55 minutes. Leave to cool in the oven and ready!
